Strawberry Cream Cheese Dessert



This strawberry cream cheese dessert is cold and creamy and not too sweet.

Serves 12

1 1/2 cups of boiling water
2 pkgs of lemon, sugar-free jello powder
1 1/2 cups of cold water
1 8 oz pkg of light cream cheese
2 cups of strawberry ice cream, softened, but not melting
1 Tbsp lemon juice
2 cups of sliced strawberries

1. Put lemon jello mix in the bottom of a heat-proof bowl. Gradually stir in the jello powder until dissolved. Add 1 1/2 cups of cold water.
2. In a separate bowl, mix cream cheese until soft, then gradually add jello mixture at medium speed until well-blended.
3. Stir in ice cream and lemon juice, fold in strawberries.
4. Spoon into parfait glasses or large glass bowl. Garnish with strawberries, chocolate curls, or whipped topping.
