Blueberry Buckle Recipe



Every time I saw mention of a blueberry buckle recipe, I was always a bit fascinated by this unusual name. Until a friend gave me this recipe, I always imagined that it was a regional specialty from deep somewhere in blueberry country. I still have no idea where it comes from, but it sure tastes good!

Preheat oven to 350F
Makes 6 Servings

Cake Base

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 1/2 tsp backing powder
1/2 tsp salt
1 egg, beaten
2/3 cup milk
1/4 cup butter, melted and cooled
1 tsp vanilla

Topping

3 cups fresh or frozen blueberries
1/4 cup granulated sugar

1. Grease an 8*8 inch cake pan
2. Combine dry ingredients
3. In a separate bowl, whisk egg, milk, butter and vanilla. Pour over dry ingredients and mix until just combined. Spread into prepared cake pan.
4. Toss berries with sugar, and sprinkle evenly over batter.
5. Bake for 55-60 minutes, or until cake tests done. Cake will be moist, so be careful not to overbake.
6. Cool on rack for 20 minutes or so before serving. Delicious with vanilla ice cream.
