Blueberry Cheesecake Recipes



Demand is growing for blueberry cheesecake recipes as we learn more about the valuable health benefits provided by the tiny blue berries.

Ricotta/Cream Cheese Blueberry Cheesecake

Serves 8-10

Preheat Oven 350F

Crust

1/2 cup butter
1 cup rolled oats
2 cups of finely crushed graham crackers
2 Tbsp brown sugar

1. Brush a 20 cm/8 inch springform pan with butter and line bottom with parchment paper
2. Melt the butter in a pan, and add oats and graham cracker crumbs. Mix well.
3. Stir in sugar.
4. Press half into the bottom of the pan, and build up the sides, pushing them firmly into place.
5. Refrigerate for 10-15 minutes

Filling

1 1/2 8 oz pkgs of light cream cheese
1 cup ricotta cheese
1/3 cup white sugar
1/2 cup of sour cream
2 eggs
1 Tbsp finely grated orange rind
1 Tbsp all-purpose flour

1. Beat the cheeses, sugar and sour cream until smooth.
2. Beat in remaining ingredients.
3. Remove cake tin from the fridge and place on a cookie tray. Pour the filling into the crust and bake 40-45 minutes, or until the filling is just set. Remove from oven and allow to cool.

Topping

1 cup of blueberries
3/4 cup blackberry fruit preserves
1/4 cup sherry brandy or orange juice

1. Scatter the blueberries over the cheesecake.
2. Sieve the blackberry preserves into a small saucepan and combine with the brandy or juice. Stir over medium heat until smooth and simmer for 2-3 minutes.
3. Brush carefully over the berries and refrigerate for several hours or overnight.
