GF Blueberry French Toast



A wonderful GF blueberry french toast that combines the classic taste of french toast with the health benefits of blueberries.

1 loaf GF bread, sliced in 3/4 inch thick slices
4 eggs
1/2 cup milk
1/4 tsp baking powder
1 tsp vanilla
4 1/2 cups blueberries
1/2 cup sugar
1 tsp cinnamon
1 tsp cornstarch
2 Tbsp melted butter
icing sugar

The night before:

1. Place slices of bread in a rimmed cookie sheet
2. Whisk together eggs, milk, baking powder and vanilla - pour slowly over bread to coat completely
3. Cover with plastic wrap and refrigerate overnight

In the morning:

Preheat oven to 450F
1. Mix berries, sugar, cinnamon, and cornstarch
2. Place in 9*13 inch baking dish
3. Place bread wettest side up on berries, wedge slices in tightly
4. Brush tops of bread in melted butter
5. Bake for 20 - 25 minutes, or until toast is golden and berries are bubbling
6. Serve warm, sprinkled with icing sugar
