Cranberry Oatmeal Cookies



These beautiful cranberry oatmeal cookies are a definite step up from regular oatmeal cookies. They look great on a tray, dotted with red cranberries, orange peel and vanilla chips. Preheat oven to 375F

1 cup butter or margarine, softened
1 1/2 cups sugar
2 eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 cups quick-cooking oats
1 cup raisins
1 cup coarsely chopped fresh or frozen cranberries
1 Tbsp grated orange peel
1 12-oz pkg vanilla chips

1. Beat butter and sugar until fluffy
2. Add eggs one at a time. Beat well after each addition. Add in vanilla.
3. Combine dry ingredients, and add to butter and egg mixture.
4. Add raisins, cranberries, orange peel and vanilla chips. Mix thoroughly.
5. Scoop 1 tsp amounts of dough about 2 inches apart of a cookie sheet.6. Bake for 10-12 minutes or until edges are slightly browned. Cool on wire racks.
