Strawberry Crisp



Whether it's a cold or a hot version, a great strawberry crisp is always a treat!

Cool Crisp

Serves 8

1 pkg vanilla wafers
2/3 cup fruit sugar
1/2 cup soft butter
1/2 tsp almond extract
2 eggs, separated
15 oz/450 gm pkg fresh or frozen(drained) strawberries
1 cup whipping cream, whipped until stiff
1/2 cup chopped toasted hazelnuts, almonds or pecans

1. Crush wafers and spread 2/3 in the bottom of an 8*8 inch pan
2. In a medium sized bowl, cream sugar, butter and almond extract until fluffy
3. Beat in egg yolks, one at a time
4. In a separate bowl, beat egg whites until stiff and fold carefully into butter mixture
5. Spread evenly over wafer crumbs
6. Cover with strawberries
7. Spread whipped cream and sprinkle nuts over the top
8. Cover, and refrigerate 24 hours before serving.
