Strawberry Rhubarb Cobbler



The combination of strawberries and rhubarb in this Strawberry Rhubarb Cobbler comprise a traditional spring dessert enjoyed by people all over the world. This particular version has lots of fruit flavor that is not overpowered by the simple cobbler topping. The nutmeg adds just that 'little something'.

3 cups sliced strawberries
3 cups diced rhubarb
2 cups sugar
1/2 cup of water
1 tsp salt
2 cups sifted flour
2 Tsp sugar
3 tsp baking powder
1/3 cup oil
3/4 cup milk
butter
nutmeg
whipping cream

1. Preheat over to 375F
2. Combine fruit, sugar and water. Place in an 8 or 9 inch baking pan. Cook for 5 minutes.
3. Combine flour, baking powder, salt and 2 Tbsp sugar.
4. Stir on oil and milk, combine until moistened.
5. Drop batter into hot fruit, making 9 'biscuits'.
6. Place a dent in each for a little butter, nutmeg and whipping cream.
7. Bake for 30 -40 minutes.
8. Remove from the oven and allow to cool slightly before serving. This is wonderful with a little vanilla ice cream.
