Strawberry Soup



This strawberry soup can be a meal in itself, especially if served with a good dollop of whipped cream! It is also divine served with fresh bread.

Serves 4

3 cups fresh strawberries, well mashed or blended
3 Tbsp sugar
nutmeg to taste
3 cups water
3 Tbsp cold water
3 Tbsp corn starch
1 cup of sweetened whipped cream

1. Combine berries, nutmeg, sugar and water in a saucepan. Gradually bring to a boil and allow to simmer for about 10 minutes.
2. Mix cornstarch and 3 Tbsp of water until smooth, and add to simmering berry mixture. Continue to cook until thick and clear., stirring constantly. This should take about 3 minutes.
3. Refrigerate, and serve cold with whipped cream.
