GF Blueberry Muffin Recipe

There's nothing like the results of a great blueberry muffin recipe, and if you have a gluten intolerance, then you will probably enjoy this recipe.

1/2 cup shortening or ghee
1 cup sugar
3 eggs, separated
1/3 cup milk
1 1/4 c GF flour
2 1/2 tsp baking powder
1 tsp vanilla
1 cup fresh or frozen blueberries
1 tsp salt

1. Cream sugar and fat.
2. Add egg yolks, salt, vanilla and milk, stir
3. Beat egg whites until stiff
4. Add dry ingredients, then fold in beaten egg whites
5. Carefully fold in blueberries
6. Bake in muffin tins 20 to 25 minutes, or until golden.
