Cranberry Chicken Recipe

Either cranberry chicken recipe prove that cranberry sauce isn't just for turkey anymore. The cranberry-stuffed roast chicken is a great family meal, somewhat on the savory side. The cranberry chicken is very different - with a tart cinnamony kick.

Cranberry-Stuffed Chicken

1 cup chopped celery
1 cup chopped onion
2/3 cups dried cranberries
1/2 cup plus 2 Tbsp butter or margarine, divided
1 garlic clove, minced
3 cups regular or gluten free stuffing croutons/breadcrumbs
1 cup crumbled regular or gluten free cornbread
2 to 2 1/4 cups regular or gluten free chicken broth
1 5-7 lb roasting chicken
1 tsp salt
1 tsp ground pepper
1/2 tsp poultry seasoning
1/2 tsp rubbed sage

1. Preheat oven to 325F
2. In a skillet, saute celery, onion and cranberries in 1/2 cup of butter until tender.
3. Stir in garlic, breadcrumbs and enough broth to moisten thoroughly and set aside.
4. Place chicken breast-side up on a rack in a roasting pan.
5. Combine salt, pepper, poultry seasoning and sage. Add half to moistened breadcrumbs. Combine the other half with 2 Tbsp melted butter, and rub into the breast skin.
6. Stuff chicken, and place extra stuffing in the pan around the chicken.
7. Place chicken in the oven, with a piece of foil paper over the breast to prevent over-drying.
8. Cook for 15 minutes for every pound. Remove foil paper about 30 minutes before the end of the cooking time.
9. Check for doneness and remove from oven when internal temperature at the thigh reaches 174F or the breast 155F. Rest for 15 minutes before serving.

Cranberry Chicken

1/2 cup all purpose or gluten-free flour
1/4 tsp ground pepper
6 boneless skinless chicken breasts
3 Tbsp margarine or butter
1 cup water
1 cup fresh or frozen cranberries
1/2 cup packed brown sugar
dash ground nutmeg
1 Tbsp red wine vinegar
Hot cooked rice, optional

1. In a shallow dish, combine flour and pepper; dredge chicken.
2. In a skillet, melt butter/margarine over medium heat. Brown the chicken on both sides
3. Remove and keep warm
4. In the same skillet, combine water, cranberries, brown sugar, nutmeg and vinegar if desired. Cook and stir until berries burst, about 5 minutes.
5. Return chicken to skillet. Cover and simmer for 20-30 minutes or until chicken is tender, basting occasionally with the sauce. Serve over rice if desired.
