GF Cranberry Muffins REcipe

A tasty gluten free cranberry muffins recipe that's easy to make.


1 1/2 cups GF flour
1 Tbsp GF baking powder
1/4 tsp salt
2 egg whites
2/3 cup white sugar
1/4 cup vegetable oil
1 cup milk
2 Tbsp grated lemon or orange peel
1 1/2 cups fresh or frozen cranberries

Streusel Topping

1/4 cup brown sugar
1 tsp cinnamon

1. Combine dry ingredients and set aside
2. In large bowl beat together egg whites, sugar, oil, milk and peel
3. Add dry ingredients to wet and stir until just combined
4. Fold in cranberries
5. Divide into 12 lined muffin cups
6. Sprinkle with streusel topping
7. Bake for 20 -25 minutes
