Every cook needs a fresh strawberry pie recipe or two to make the most of one of the sweetest berries around.

Fresh Strawberry Pie

I was given this recipe from a lady that I babysat for as a teenager. It has definitely stood the test of time in our house!

3 heaping Tbsp cornstarch
1 cup white sugar
1 cup water
1 qt berries, ½ whole. ½ sliced
baked or graham cracker crust
whipped topping

1. Boil water, add sliced berries, sugar and cornstarch.
2. Stir, cook until clear and thick.
3. Add whole berries. Cool slightly and pour into pie shell.
4. Refrigerate until ready to serve, garnish with whipped topping. Real whipped cream is best!

Fresh Marshmallow-Strawberry Pie

Just after we were married, my husband and I were shopping for a 'parts car'. We finally found what we needed, and when we went to pick it up, we were offered a slice of this marvellous pie. I was thrilled that she was willing to share this wonderful fresh strawberry pie recipe. This contrast of tastes and textures is just sooooooooooo good!

1/4 cup milk
1/4 cup sugar
16 lg marshmallows
4 cups quartered strawberries
1 cup whipping cream
regular, shortcrust or graham cracker crust

1. Cook milk, marshmallows and sugar over low heat until smooth.
2. Refrigerate until fully cooked.
3. Whip cream, then beat the cooled marshmallow mixture and combine the two.
4. Add fresh strawberries, place in cool prepared crust and refrigerate until ready to eat.

Yukon Pie

Grease a round pie pan.

2-3 cups halved strawberries4 egg whites1/4 tsp of cream of tartar1/4 tsp salt1 cup sugar1/2 tsp vanilla1 cup whipping cream, whipped until stiff

1. Combine egg whites, salt and cream of tartar. Beat until stiff,gradually adding sugar and vanilla.2. Spoon into pan and form into a shallow 3. Bake at 275F for 15 minutes. Turn off oven, leaving pan in overnight.3. Just before serving, spread with 1/2 of whipped cream and then with strawberries. Top with another layer of whipped cream and garnish with a few whole berries.
