Strawberry Jello Dessert

This strawberry jello dessert recipe is so easy to make, but it is often the first thing to go at potlucks and family dinners. It can also be made with other frozen berries, and different flavors of jello. Our family's favorite combination is mixed berries and cherry or raspberry jello.

1 bag frozen strawberries
2 pkgs of regular or sugar-free jello
2 Cups boiling water
1 pint/2 cups whipping cream (or a frozen pre-whipped topping)
2 tsp vanilla or almond extract
2 Tbsp sugar
sliced toasted almonds or grated chocolate for garnish

1. Take an 8*8 inch cake pan, or individual serving containers, glass is nicest for presentation
2. Pour frozen berries into the pan - enough to generously cover the bottom with a single layer
3. In a separate bowl, whisk the jello and boiling water until the jello powder is dissolved. Pour over the frozen berries and refrigerate for at least 30 minutes.
4. Meanwhile prepare the topping - whip cream until soft peaks form, add sugar and extract, and continue to whip until stiff peaks form.
5. When jello is set, spread whipped topping generously over the top and garnish as desired
